I don't think that they're attempting to change the material of the films in favor of coming off as more serious or adult. I think they're just responding to what audiences crave, in terms of drama and inner turmoil. A screenplay with no serious soul-searching moments in it is a rarity these days, I think because people really enjoy watching their characters struggle in an emotional way. Plus, if you don't go a certain angle when writing it, these things can be badly mishandled.
This, because expectations from fanbases of a franchise can wind up driving the movie to be overly-hyped and thus disappointing. Not that there's anything wrong with being excited for a movie, but I feel some franchises are played too much to the fans' expectations. The Star Trek movies, for example. I love those damn movies, but they're so callback-y and full of references that much of their appeal is towards people who were already Trekkers.
